Preparation of Concentrated Brown Stock
To obtain 1 kg of concentrated brown stock, mix:
- 290 g of ChefLab® Brown Stock Mix
- 460 g of water
- 250 g of sunflower oil
Preparation Method
- Pour the powder mix into a planetary mixer or suitable container.
- Gradually add water according to the indicated dosage.
- Slowly incorporate the sunflower oil.
- Mix until a homogeneous, smooth, and stable cream is obtained.
Usage Instructions
The product obtained can be used:
- From 5% to 10% in gastronomic preparations to intensify flavor, color, and structure.
- As a base for preparing broths, sauces, stocks, and reductions.
- To enrich ragùs, stuffings, stews, braises, and industrial or professional catering preparations.
